Tropical Bourbon Lemonade

Pineapple juice aerates great when you shake it with ice, creating that creamy foam you can see on top of the drink. We’ve used both Buffalo Trace and Old Bardstown BIB at the bar, but you can use any bourbon that doesn’t have notes which would clash with pineapple. ,
In a shaker tin, add 2 ounces of bourbon, 3 ounces of pineapple juice, 3/4 ounce lemon juice, 1 ounce simple syrup (or velvet falernum if you want to lean into the tropical notes), a few dashes of tiki bitters if you have them (Angostura is also tasty)
Here’s my secret ingredient that I’m going to swear by the addition of – a barspoon of cherry schnapps. Shake it really hard with ice, strain into a glass (get all that good foam out), and top with some fresh ice. Garnish with a lemon slice and maraschino cherry.
